PUMPKIN SPICE MUFFINS
1 box Carrot Cake Mix
1 can Pumpkin...NOT Pumpkin Pie Mix
1 egg
Mix all ingredients. Fill muffin tins...I got 12 muffins. Bake at 350 until skewer comes out clean.
These muffins are wonderfully moist and spicy! I actually added 1 tsp of pumpkin pie spice to mine, but it is not necessary with the spice in the carrot cake mix.
