Pumpkin Spice Muffins


PUMPKIN SPICE MUFFINS

1 box Carrot Cake Mix
1 can Pumpkin...NOT Pumpkin Pie Mix
1 egg

Mix all ingredients.  Fill muffin tins...I got 12 muffins.  Bake at 350 until skewer comes out clean.

These muffins are wonderfully moist and spicy!  I actually added 1 tsp of pumpkin pie spice to mine, but it is not necessary with the spice in the carrot cake mix.

Fall Is In The Air!

FALL IS IN THE AIR!


     Who is loving the slightly cooler temps outside????  We are!  My children cannot wait until we can have a fire in the fireplace.  This weekend was all about fall, football, food, and relaxing at our house!  The kids were at home this weekend so that means football and food!  Finally my children are old enough to start loving the Bama football!!  But, I watch all of the games!  I love college ball!!!!

     Football menu:  Chicken tenders fried with honey mustard, Chicken Wings, Fried Monterey Jack Cheese Sticks with Marinara, and Potato Skins with Cheddar and Bacon and Sour Cream Dip,  All homemade and easy because everyone eats at their own time!!!  Football reigns!  That means that Mom watches too:))

     Sunday afternoon is when I love to cook and start the week off right!  Today I made Beef Stew, Broccoli Salad, and served with warm croissants from bakery section at the grocery.  It was quite good.  But with teens in the house, it was served in stages.  My son had robotics team and asked if I would make some potato skins for him to pick up and take.  There goes my afternoon....but I love it!!


     I am all about using what I have since that is all we have sometimes!  I had purchased bbq on Friday then no one was here to eat it...so goes life with teens!  When my son asked me to make some potato skins for their meeting this afternoon, I decided to use the leftovers in the skins!  Half of the potato skins had pork bbq meat and half had smoked chicken.  I added a bowl of sour cream with green onions and the container of white sauce.  

     I cannot do simple!  When my son asked me to make the potato skins, I immediately began thinking what else I could make.  I had a container of crescent roll dough left from some pigs in blankets and a package of smoke sausage links.   The smoke sausage was buy one get one free at the grocery:))  I cut the sausage into 4 pieces per link and wrapped with pieces of dough.  They baked at 350 for approx 10 min.  Fortunately, I had honey mustard on hand.  BTW, he said they were gone in seconds!

  

    I also sent a bag of these yummies!  When at Walgreens the other day, they had the candy corn mix on sale. Of course I had to buy some!  When at the grocery, I thought of the Chex Mix with a twist!

Fall Chex Mix
1 box corn chex
1 box rice chex
1 box Honey Nut Cheerios
1 box Cinnamon Toast Crunch
1 Bag pretzel sticks
Mix all cereals and sticks in large roasting pan that you can get and any $1 item store.  In a saucepan, mix 1 bottle of Worcestershire sauce, 1 stick of butter, 1 cup oil, 5-7 dashes hot sauce, and Tbsp garlicsalt.  Heat the mixture until it comes together.  Drizzle this mixture over the cereal mixture while stirring it so that it is all coated.  Bake the mixture at 250 degrees to dry it out.  Stir every 30 minutes.  When cereal pieces are no longer soggy, it is done.  This will take 2-3 hours.  When out of the oven and slightly cooled, add candy corn or candy corn mix!  Make sure and store this mix in an air tight container or it will become stale.  This is sooooooo good!
